Zucchini Quiche Supreme

1 9-inch deep dish pie shell, unbaked
2 small zucchini (washed, dried & sliced thinly)
1 TBL butter
1 1/2 TBL minced chives
1 tsp each salt & pepper
1/4 tsp oregano
2 cups sour cream
3 extra large eggs
1 cup cheddar cheese, shredded
1/4 cup parmesan cheese, grated

Prick pie shell and bake at 400* for about 8 minutes until lightly golden. Remove from oven and cool. Saute zucchini in butter and add chives, salt, pepper and oregano. Combine sour cream, and eggs. Beginning with zucchini, sour cream mixture, and scattering of grated cheese. Continue layers, making two or more until all ingredients are used. Sprinkle Parmesan cheese on top and bake at 325* for 40-45 minutes until knife inserted in center comes out clean. Serves 4-5
