Pineapple Zucchini Muffins

3 eggs
1 cup sugar
2tsp pure vanilla
1 cup sunflower oil
2 cups zucchini, chopped fine
3 cups flour
1 tsp baking powder // 1 tsp baking soda // 1 tsp salt
1 cup chopped pineapple drained
1/2 cup raisins
1 cup chopped nuts (optional)

Beat together eggs, sugar, vanilla and oil until fluffy. Add Zucchini. Combine all dry ingredients and stir into zucchini mixture. Fold in pineapple, raisins & nuts. Spoon into greased muffin tins. Bake at 375* for 25 minutes. Makes 10 extra large
